Ingredients

¾ cup butter, softened
1 cup granulated sugar (plus more for rolling)
1 large egg
1 tablespoon milk
¼ cup molasses

1¼ cups all-purpose flour
¼ teaspoon salt
2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves

½ cup white chocolate chips
Milk, as needed (for melting chocolate)

Optional toppings: sprinkles, crushed candy canes, or chopped nuts

Method

Preheat the oven to 350°F. Line a baking sheet with parchment paper. Stainless steel bakeware is ideal for even heat and consistent results.

In a medium bowl, whisk together the flour, salt, ginger, baking soda, cinnamon, and cloves. Set aside.

In a separate bowl, cream together the butter and sugar until light and smooth. Add the egg, milk, and molasses, mixing until fully combined.

Gradually add the dry ingredients to the wet mixture, stirring just until incorporated. The dough will be soft and slightly sticky.

Scoop the dough into 2-tablespoon portions, roll into balls, and coat lightly in granulated sugar. Arrange on the prepared baking sheet, leaving space for spreading.

Bake for 8–10 minutes, until the edges are set and the centers are just soft. Remove from the oven and allow the cookies to cool completely — this helps them develop their signature chewy texture.

Meanwhile, gently melt the white chocolate chips, adding a small splash of milk if needed for a smooth consistency.

Once cooled, dip or spread white chocolate over half of each cookie. Decorate with your chosen toppings while the chocolate is still warm. Let set before storing.
